Recipe:Smoked Baked Beans

  • - 2 lbs. ground beef or sausage
  • - 15 oz. can of black beans
  • - 15 oz. can of kidney beans
  • - (3) 15 oz. cans of baked beans
  • - 3 peppers (sweet, red bell, and green bell), seeded and diced
  • - 1 large sweet onion, finely chopped
  • - 4 cloves garlic, minced
  • - 3 to 6 jalapeños, seeded and diced
  • - 2 C. sweet BBQ sauce
  • - ¾ C. brown sugar
  • - ½ C. Dijon mustard
  • - ½ C. chopped cilantro
  • - Salt and pepper to taste
Instructions

1. Brown ground beef or sausage in large cast iron skillet, seasoning with garlic, salt and pepper
2. Combine black beans, kidney beans, baked beans, onion, peppers, jalapeños, BBQ sauce, brown sugar, Dijon mustard, and chopped cilantro
3. Season to taste with salt and pepper and mix well
4. Cook uncovered for 1½ - 2 hours at 325°F, stirring every 15-20 minutes
