Oysters "Dougie-Feller"

Ingredients
- 1 10-12 Large Oysters
- 2 2 oz. pancetta
- 3 2-3 Tbsp. shallot, chopped
- 4 2 Tbsp. unsalted butter
- 5 4 cloves minced garlic
- 6 3 Tbsp. hot pepper sauce
- 7 2 oz. panko crumbs
- 8 Juice of ½ lemon
- 9 2 C. spinach, chopped
- 10 Bed of rock salt
INSTRUCTIONS
1. Shuck oysters
2. Melt 2 Tbsp. unsalted butter in cast iron skillet
3. Sauté pancetta in skillet until crispy (5-7 minutes)
4. Add chopped shallot, and cook until fragrant, about 1 minute
5. Add 4 cloves minced garlic, cook until fragrant, about 1 minute
6. Add 3 Tbsp. hot pepper sauce, stir to incorporate
7. Mix in chopped spinach
8. Sauté until spinach begins to wilt
9. Add 2 oz of panko crumbs
10. Season with salt and pepper to taste
11. Stir in lemon juice
12. Remove from heat and set aside
13. Place 10-12 large oysters on grill at 350°F, shell side up, cooking for 5-7 minutes
14. Remove from grill and lay oysters on a bed of rock salt
15. Top oysters with pancetta and spinach mixture
