Knapp 980 Smoked Chuck Roast

Ingredients

    Chuck Roast: larger the better
  • 2
    Blue Agave (you can also use olive oil): binder
  • 3
    BBQ Rub: use your favorite
  • 4
    Apple Juice: spritzing & foil pan wrap

This Smoked Chuck Roast by Rich Knapp is a delicious and filling meal you can have for any occasion!

Instructions

  1. Fire up the 980 with lump charcoal to 275° (you can also smoke at 265°) and warm up for 20 minutes
  2. Coat all sides of the chuck roast with blue agave
  3. Season all sides with your favorite BBQ Rub
  4. Place the chuck roast in the 980
  5. Check in periodically and spritz with apple juice
  6. Fill the foil pan with apple juice & BBQ Rub
  7. Remove the chuck roast at internal temperature 160° & place in the foil pan and cover with foil
  8. Bump up the heat to 300° and place back in the 980
  9. Cook to internal temperature 210° or as Rich says “probe tender”
  10. Remove & rest for 60 minutes
  11. Hand shred the meat in the juices
  12. Enjoy
