Knapp 980 Smoked Chuck Roast

Ingredients
- 1 Chuck Roast: larger the better
- 2 Blue Agave (you can also use olive oil): binder
- 3 BBQ Rub: use your favorite
- 4 Apple Juice: spritzing & foil pan wrap
- 5 Foil Pan & foil
- 6 Char-Griller Grills Gravity Fed 980
- 7 Fire Starters
- 8 Lump Charcoal & Smoking Wood
This Smoked Chuck Roast by Rich Knapp is a delicious and filling meal you can have for any occasion!
Instructions
- Fire up the 980 with lump charcoal to 275° (you can also smoke at 265°) and warm up for 20 minutes
- Coat all sides of the chuck roast with blue agave
- Season all sides with your favorite BBQ Rub
- Place the chuck roast in the 980
- Check in periodically and spritz with apple juice
- Fill the foil pan with apple juice & BBQ Rub
- Remove the chuck roast at internal temperature 160° & place in the foil pan and cover with foil
- Bump up the heat to 300° and place back in the 980
- Cook to internal temperature 210° or as Rich says “probe tender”
- Remove & rest for 60 minutes
- Hand shred the meat in the juices
