Grilled Shrimp Ceviche

Ingredients
- 1 2 Pounds Uncooked Peeled/Deveined Tail Off Shrimp (Size Does Not Matter)
- 2 5 Cucumbers
- 3 5 Tomatoes
- 4 4 Jalapenos
- 5 1 Medium Red Onion
- 6 10-15 Limes
- 7 4 Avocados
- 8 1 Bundle Cilantro
- 9 Clamato
- 10 Tapatio Hot Sauce
- 11 Tajin Seasoning
- 12 Char-Grillers Chili Lime Seasoning
This fresh Grilled Shrimp Ceviche is packed with flavor and mixed with fresh veggies. Add a side of tortilla chips to make a taco-style snack.
Instructions
- Medium to small dice the tomatoes, onion, and cucumber
- Peel and deseed cucumbers and dice
- Deseed Jalapenos and finely dice
- Finely Chop Cilantro
- Generously season with Char-Grillers Chili Lime Seasoning and Tajin
- Fire up the grill and cook shrimp
- Cut shrimp into pieces, similar size to the produce (save some shrimp for garnish)
- In a large bowl combine shrimp and produce
- Add Tapatio hot sauce, lime juice, and Clamato to taste
- Top with fresh sliced avocado, lime wedge, and extra shrimp when serving
