    Bag of Tortilla Chips

    Shredded Rotisserie Chicken - 2 Cups

    Red Enchilada Sauce - 1/2 Cup
  • 4
    Fire Roasted Tomatoes - 1 (15 oz) Can

    Black Beans - 1 Cup (Drained)
  • 7
    Shredded Cheddar Cheese - 1 and 1/2 Cups
  • 8
    Shredded Monterrey Jack Cheese - 1 and 1/2 Cup

We used Rotisserie chicken from the store to make this a great weeknight meal. Thrown on your favorite sauce, salsa, and toppings and let the grill work it’s magic.

Optional Toppings: Avocado, Sour Cream, Cilantro, Shredded Lettuce, Jalapenos

Instructions:

1. Heat Grill to 350 degrees

2. Shred chicken

3. Toss chicken with enchilada sauce, tomatoes and black beans

4. Divide tortilla chips among four large pieces of foil

5. Top chips with chicken mixture and then with cheese

6. Fold packets to seal

7. Place packets on grill for about 15 minutes

8. Garnish with toppings of choice.
