Corned Beef Brisket and Potatoes

Ingredients

    18 lb. corned beef brisket
  • 2
    2 Tbsp. cinnamon
  • 3
    1 Tbsp. nutmeg
  • 4
    2 Tbsp. Allspice
  • 5
    3 Tbsp. salt
  • 6
    2 Tbsp. minced garlic
  • 7
    2 Idaho potatoes
  • 8
    6 oz. shredded cheese of your choice
  • 9
    6 oz. heavy cream
  • 10
    2 oz. chopped shallot
  • 11
    Salt and pepper
  • 12
    2 oz. peppercorn

INSTRUCTIONS

1. Mix peppercorn, cinnamon, nutmeg, Allspice, salt and garlic.

2. Add vinegar based BBQ sauce to brisket.

3. Add spice mix all over the brisket on both sides.

4. Heat smoker to 225˚F.

5. Smoke brisket until internal temp reaches 165˚F.

6. Heat butter in a cast iron skillet

7. Add chopped shallot.

8. Chop and boil Idaho potatoes for 10 minutes in water.

9. Add salt and pepper to taste.

10. Add heavy cream to potatoes.

11. Close grill and bring to a boil.

12. Add your favorite shredded cheese

13. Mix well and cook for another 10-15 minutes.
