- 1 Chicken Drumsticks
- 2 Favorite Seasoning
- 3 Favorite Sauce or Glaze
- 4 Charcoal
- 5 Smoking Wood Chunks

Instructions
- Transform the drumsticks into lollipops
- Using a sharp knife and kitchen shears cut around the chicken ankle to create the handle
- Remove the skin, meat, tendons, and cartilage to expose the bone. This will be your “lollipop stick”
- Remove any loose tendons with the kitchen shears
- To ensure that the chicken legs will stand up straight, flatten the bottoms with a sharp cleaver
- Cover the chicken leg handles with foil to protect from burning and discoloration
- Season the chicken liberally with your favorite seasoning. We decided to go with a habanero seasoning to pair with a sweet apricot glaze to come later
- Preheat your grill or smoker and set it up for 2 Zone Cooking (Direct and Add any smoking chunks or chips at this point if you wish
- Place the chicken on your grill away from the direct heat and allow to cook and smoke until an internal temperature of 165*F is reached
- At this point it's time to sauce! Use your favorite sauce and coat each drumstick
- Return to the smoker and cook for an additional 10 minutes
- Remove from the smoker and glaze one last time until they’re nice and saucy
- Remove the foil, plate them nicely on a platter and enjoy. These are sure to impress!
