Jeremy Souza of PittboysBBQ is bringing you a classic BBQ recipe with a fun twist with these Chicken Lollipops. Easy to make and fun to eat, they'll sure to be in high demand for every family dinner and cookout to come!

Instructions

  1. Transform the drumsticks into lollipops 
  2. Using a sharp knife and kitchen shears cut around the chicken ankle to create the handle
  3. Remove the skin, meat, tendons, and cartilage to expose the bone. This will be your “lollipop stick” 
  4. Remove any loose tendons with the kitchen shears
  5. To ensure that the chicken legs will stand up straight, flatten the bottoms with a sharp cleaver
  6. Cover the chicken leg handles with foil to protect from burning and discoloration 
  7. Season the chicken liberally with your favorite seasoning. We decided to go with a habanero seasoning to pair with a sweet apricot glaze to come later
  8. Preheat your grill or smoker and set it up for 2 Zone Cooking (Direct and Add any smoking chunks or chips at this point if you wish
  9. Place the chicken on your grill away from the direct heat and allow to cook and smoke until an internal temperature of 165*F is reached
  10. At this point it's time to sauce! Use your favorite sauce and coat each drumstick
  11. Return to the smoker and cook for an additional 10 minutes
  12. Remove from the smoker and glaze one last time until they’re nice and saucy
  13. Remove the foil,  plate them nicely on a platter and enjoy. These are sure to impress!
