Boneless Chicken Thighs W/ Broccolini & Cheesy Potatoes

Ingredients
- 1 Boneless Skinless Chicken Thighs
- 2 4 Large Potatoes
- 3 1 Small White Onion
- 4 2 Bundles of Broccolini
- 5 1 Loaf Garlic Bread
- 6 1⁄2 Cup Cheddar Cheese
- 7 Green Onion for Garnish
- 8 Favorite BBQ Rub
- 9 Favorite BBQ Sauce
A delicious and easy to make weeknight meal, these boneless chicken thighs from @PittBoysBBQ are something the whole family will love. Pair them with cheesy potatoes and broccolini and you've got a great meal!
Instructions
1. First, season chicken thighs on both sides with your favorite BBQ rub
2. Set in fridge while preparing the vegetables
3. Dice potatoes into equal sized pieces
4. Dice onion, combine with potatoes and season with same BBQ rub 5. Wash, clean, and season broccolini with same BBQ rub
6. Fire up the Char-Grillers Triple Play
7. Start cooking potatoes and onions first in a preheated cast iron skillet on the grill
8. Grill chicken thighs over direct heat (Charcoal Side)
9. Char Broccolini over direct heat (Propane Side)
10. Flip chicken once and begin basting with BBQ sauce
11. Once potatoes are fork tender, sprinkle cheddar cheese over top
12.Flip and sauce other side of chicken and remove once an internal temp of 165*F is reached
13.Garnish potatoes with green onion and serve
